Post subject:  Cilantro Jalapeno Hummus

This is excellent!

CILANTRO JALAPENO HUMMUS

"A deliciously flavorful and silky Cilantro Jalapeno Hummus."

Ingredients

1 can garbanzo beans, rinsed and peeled
1 cup cilantro
½ cup Italian parsley
1 garlic clove
1 jalapeño, seeded (I used hot sauce)
¾ tsp salt (I used 1/4 tsp)
Juice of 1½ limes (I used 1 lime)
1/2 - 3/4 cup olive oil (I used 1/4 cup)

Instructions

Place the beans, cilantro, parsley, garlic, jalapeño, salt and lime in the bowl of a food processor. Pulse until well mixed and smooth. (I ran it on high). Slowly add olive oil as the food processor is running to get to desired consistency. Place in covered container and refrigerate overnight to let flavors develop. Serve with pita chips and vegetables.

Serves: 4-6

That looks fantastic. I made hummus yesterday (CI's basic recipe) and put smoked paprika and smoked garlic instead of cayenne and regular garlic. I love how easy it is to play around with hummus.

I love hummus but can't get the rest of the family into it! :( On the bright side, a friend brought me some canned jalapenos from the States. I may just have to do this on my own! :)

The key is to peel the chickpeas, which results in a creamy texture. It's very time-consuming, but definitely worth it.

I LOVE smoked paprika! I use it in practically everything. I've never tried smoked garlic, but it sounds great!

I wish I had seen that earlier - I just made a new batch of tahini today, and made a batch of hummus, to save myself the trouble of scraping out all that tahini from the VM! Still have to scrape the hummus out, but I don't mind wasting a little of that...but only a little.

Speaking of smoked things, chipotles are delicious in hummus.

Oh yeah, love chipotles!

Smoked black pepper is also great, but hard to find. I've been using McCormick Smokehouse ground black pepper, which is not actually smoked, but has natural smoke flavor added. It's really good, but also hard to find. Amazon sells it, but you have to order a pack of 12.

I tried Ajika organic smoked black peppercorns from Amazon awhile back and it sucked - couldn't detect any smoke flavor whatsoever.

I peel the chickpeas too. I dump the can in a owl of water and rub the peas between my hands. The skins float to the top. It is a bit of a pain but it is worth it. Hummus is such a quick thing to make it is not too painful.

I don't peel. I do add some water to the hummus, though. That supposedly makes it smoother. I guess it works. I've never had gritty hummus. I like Aleppo pepper in mine.
