I made Mini Pumpkin Bundt Cakes using Joanne Chang's Pumpkin Muffin recipe. The texture was moist and the flavor was wonderful. A definite keeper!

Those are so cute, Lu! Do you recall how you adapted the baking time to allow for that type of pan? I have that cookbook and two mini-bundt pans and would love to try them.

I baked them for 30 minutes. I'm actually baking a batch now and the house smells wonderful. This is a great recipe.

Thanks Lu. I've got the cookbook open and my pans ready on the counter! I probably wouldn't instinctively do the pepitas, though -- do you?

And speaking of Flour, I saw the other day that her second cookbook is being released in a few weeks. My cookbook shelf is full (of course) but I'll probably break down and get it anyway when it comes out. I love her first book and she's just such a nice person in general. That's justification enough, right? ;)

I did use the Candied Pepitas. I placed the batter into the mold and then topped them with the pepitas. I had some mixed reviews on them. Some thought they were too sweet and other thought they complimented the "not so sweet" pumpkin batter. I liked the contrast in texture.

Yes, I plan to buy her "Flour, Too" book because we all need another cookbook in our collection, right? ;)
