A friend of mine likes to make Horseradish. He is 78 and has been diagnosed with Lung and Brain Cancer. Last Saturday, I had an opportunity to go to the field where he gets the roots and dig some up for him. Boy was that a lot of work especially since I spent the morning working in my yard doing leaves and then hauling the leaves, branches and old shingles to the Transfer Station for 5 hours before I went to get the roots. The ground was nice and soft, so the digging wasn't too bad and I was able to get a fair amount of roots. Yesterday we ground the roots. First we washed them off and peeled them. It took the 2 of us about an hour. Next came the grinding. We did that out in the garage with a fan blowing the fumes away from the grinder. It took me about 20 minutes to grind the roots and then Ed added the White Vinegar and Kosher salt and we ended up with about 12 lbs of Fresh Horseradish. Ed will make a lot of people happy today when he goes to see them.
I love fresh horseradish. Nice of your friend to do so much for others when he is having such a bad time himself. Seems like you have some good folks by your side.

Our local grocer sells the root. I wondered about making your own, and if it was superior. I'm kinda glad I didn't just go grind up some, I never thought about the fumes......
I can get fresh horseradish root at the grocery stores here. Never did but I can. I was in Sweden last summer and they served a bit of freshly grated h.r. (nothing in it) to accompany fish. Seriously delicious.
