As I have zero experience with this custard/straining thingy, please let me know what size of strainer you recommend - thanks :!: :)
However, I do LOVE great chocolate ice cream and this thread has me motivated!

wino,

I use the same strainer at home as I do at work, although they're different brands. I looked on the Cuispro website (the one I use at home) and couldn't find it, but here's a pic of it.

This particular strainer binds a traditional mesh strainer (in what I'd consider a medium straining capacity) with a wire "grid" strainer on both sides. It allows for breaking things up while keeping them smooth at the same time. By far my favorite strainer.

Thanks, Amy - I have one of those! I have 4 strainers of differing mesh sizes and strain almost anything liquid - even my wine :!: :roll: :lol:
That is an ultra-fine mesh for sediment. - Sheesh, whatta a nerd I am... :shock: :o

Steve, if you make this, let me know how it turns out! Also, as I mentioned before, add a touch of vanilla extract at the end, about 1/2 tsp - it really makes a difference.

I feel so utterly HOMERISH, (not the poet) ... "DOH!" I promise I will never not forget to read Amy's posts most assiduously for clever construction.

merstar, I will give the ice cream a go as soon as some good chocolate shows up again. Finding good chocolate here in the "boonies" is very much a matter of opportunity. Filipinos love very sweet milk chocolate and not the darker sort. It will show up on the small baking supply's shelf for a few days or maybe a couple of weeks, then we have to wait a few months until the next shipment arrives. A couple months back I scored some repackaged, dutched dark cocoa that made my eyes tear up, it was so good. Try finding it again, hah! Even just the name on the original package.

Steve, my condolences! Aren't there some mail order places that will ship to the Philippines or is it just too expensive?
