If I may not so humbly say, I made the most amazing mango ice cream :D using David Lebovitz' recipe for peach ice cream (uses sour cream and heavy cream...good bye diet!) and substituting lime juice for lemon. My BIL keeps sending us mangoes and I have been scrambling to use them all. I just blended the makings for his mango sorbet. Not so sure I like the addition of rum, but added it anyway in order to keep the sorbet from getting too icy. It's been fun to make so much ice cream. Next will be coffee with choc. chips or strawberry.

Mangoes freeze beautifully, so if you get tired of making ice cream or sorbet, you can always freeze some of the fruit for use at a later date. We are currently serving a coconut panna cotta with a mango/pineapple sauce at the restaurant, and it's delish.

Sounds really tasty, Amy. Thanks for the freezing idea. I can only make so much ice cream :)

My hat is off to you, Phoenix! The sour cream looks very interesting. We are making mango ice cream tomorrow, but I'm using a more traditional recipe, unless my wife isn't watching and I can sneak some sour cream in. ;)
