I made the Heavenly Hots (SOUR CREAM pancakes: 2 cups sour cream to 1/4 cup flour) from the latest issue of CC (March 2011) and they were just okay. To say they were delicate would be an understatement; what a PITA to flip and transfer to the baking sheet. They were very light and after what seemed like a healthy serving, both DH and I (DD wouldn't touch them: "ewwww! sour cream"?!?!) were still hungry. I think I'll stick to my ricotta pancakes when I need a dairy/pancake hit. |

Agreed. After a bit of a learning curve I managed to turn them out right, but I still prefer regular pancakes or better yet buckwheat pancakes from Whole Grain Baking. |

This is similar to a cookie recipe made in a pizzelle iron (from Flo Braker's Sweet Miniatures. It's just sour cream, sugar, flour and vanilla. They bake up really crunchy and delicious. I don't think that's what I'm looking for in a pancake, though. |
