Would I give you bad advice about booze?

It will be good. BTW, if you had just gone ahead and put it on the back burner when this thread started it would be done!

I have made Port jelly once.

That sounds really good. Recipe?

As requested this is the recipe I used. It is from Grady Spears "The Texas Cowboy Kitchen"

Texas Port Jelly

2 Cups Port
3 Cups Sugar
1 T Lime Juice
2 Cinnamon Sticks
3 Ounces Liquid Fruit Pectin

Combine port, sugar, lime juice, & cinnamon sticks together in a large heavy saucepan & bring to a boil.

Boil for 2 minutes, stirring, & remove from heat.

Add pectin, mixing well.

Cool mixture & transfer to 3 sterilized jars, seal, & store. Yields 3-8 oz jars.

Recommends serving on a hot buttermilk biscuit, but says it goes well on pork chops, & roasted chicken as well.

Enjoy
