 Post subject: What can I do with some crappy port?

All,

Guest just left 3/4 of a bottle of not very good port at my house. Is there anything I can do with it, other than pour it down the drain? Anything I could cook with it?

I would highly recommend using all of it to make a port reduction. A Keller recipe I followed had me reducing an entire bottle to one ounce! However, it was fabulous. You use it as decoration or directly on almost anything. It becomes very thick and very sweet. Use your lowest heat and a heat reducer.

You can use the port do deglaze a pot roast.

Invite your oldest aunt for bridge....or not!

It keeps for such a long time. I'd leave it out so it's not forgotten and just put a dab in everything that makes sense, and deglazings, etc.

Does that work with not-very-good port? If you reduce bad wine, you generally get concentrated badness ...
