I learned how to make these when I went to school in Provence...you tourne potatoes (think mini footballs) then blanch them to knife tender. Sauté them on fairly high heat to brown (I use both butter and oil), add pastis and flame, like so...

Finish with butter and whatever herbs you desire. I include saffron and sautéed fennel frequently.

Edited to add: Seriously good with any fish stew, and particularly good blanched in fish stock.

Kind of a PITA, but if you need little uniform taters, it's the way to go.

The ones in this video are bigger than Amy described, but if I remember my short lesson on French potato cookery, you can vary the size according to your needs.

Actually, they're not that much bigger than what I do. They take some practice, and I have a Wusthof tourne knife which makes it easier, but they are dang fun to make.
