I am looking for Pennie's caramel recipe if anyone could help me out there I would be grateful. I searched the board, but I'm apparently inept.

CARAMELS
Yield: 5 pounds
Ingredients 1 lb. butter 2 lbs. brown sugar 1/4 teaspoon salt 16 oz. Light Karo syrup 2 (15-oz.) cans Eagle Brand Sweetened condensed milk 1 tablespoon Vanilla extract
Procedure: Melt butter in a heavy 6-quart pan. Add brown sugar and salt. Stir in corn syrup, mixing well. Gradually add milk, stirring constantly. Cook over a medium heat until it reaches the firm ball stage (245 degrees). Remove from heat, stir in vanilla. Pour into a well buttered 11” x 18” jellyroll pan. Cool, cut, and wrap in wax paper squares. Disaster Warning: CHECK YOUR THERMOMETER before you start to make the caramels, by placing it in boiling water for a few minutes. It should register at 212 degrees, if it doesn’t then add or subtract accordingly.

Further to the thermometer check - allow 1 degree F for every 500 feet above sea level. I'm at 2,000 feet so water boils at 209. I don't know anything about caramel making so I don't know how critical temperature is. Amy and others can provide more practical experience.

Those sound lovely. I we are still three or four months away from the one week in "winter" it will be cold and dry enough here to do candy making, but I am filing this away. I love caramel.

I just made caramels for Halloween tomorrow, and I ordered the wrappers you posted, Jean. Lots of cutting and wrapping tomorrow!

Let me know what you think of the wrappers. I'll never go back to the foil squares. I meant to make caramel for Halloween but it didn't happen. I'm going to try and do them for the hockey teams on the weekend.

I ran out of wrappers the other night when cutting my first batch of the season, and when I went to order them again on amazon the price had gone from $18 to $27, which was annoying. Plus free shipping is now $35, so I searched again and found what I think are the same ones at Lynn's (which I think is a site Frank posted here) and ordered 2 packs of 1000 wrappers at $17 each. Even with paying for priority shipping I think I'm ahead of the game. Wish I had just ordered them months ago. The foil wrappers are $5 for 50 here with no coupon at Michaels, so for sure this price is better than buying the foil ones and I love the look of the caramels in the twisted clear wrappers. Okay, so these wrappers are excellent, seems to be the same as what I ordered from Amazon. So totally worth it and the people I dealt with by phone and email were all great. I found the same at a wholesalers website for $8 for 1000 but they had a $50 minimum order...and I did not need that many wrappers!

Oops, I didn't mean to post this in travel.....more coffee. I just made a batch thinking it would cool during the day and kept wondering why it looked so grainy....turns out I forgot to add the brown sugar. I now have a tray of fairly disgusting tasting soft caramel. Can this be saved?
