So,

When you're travelling to some place with a kitchen, where you're planning to cook several meals what do you usually pack? Generally the kitchens we visit have some cooking equipment, but it's often sort of random. This time, we're taking:

  • Knives (assorted sizes)
  • Peeler
  • Plastic measuring cup
  • Measuring spoons
  • Souffle pan (that one's kind of specific)
  • Coffee grinder & press-pot
  • Large non-stick pan

I also like to bring a few spices with me, so I don't end up buying a whole bottle at $3.80 just so I can get a teaspoon of something. My standard kit is:

  • Disposable pepper grinder
  • Cinnamon
  • Nutmeg
  • Smoked Paprika
  • Oregano
  • Thyme
  • Cumin
  • Coriander
  • Curry powder

If it is only a weekend I only pack powdered Adobo, because I can get by with a lot of dishes with it and it is easy. If I am going for a week, it depends on who I am going with, but yes, I have learned to bring my knives.

I need a good carry solution for knives. Does anyone have one?

There are dozens of knife rolls and cases available at restaurant supply places online. Some hold 4 or 5 knives, some will hold an armory. You can also find various snap on blade covers. I use those when my knives are at home, in their drawer. I don't have counter space for a nice knife block.

I have a tool kit (quite literally) which holds a second of virtually everything I use in my kitchen, from tongs to peelers to a microplane to thermometers. Granted, doing a lot of catering necessitates that, but it's really easy to set this up using your daily kitchen gear. Tool kits (mine was about $20 from WalMart) are ideal for this.

And, my knives go with me in a knife kit.

I always take my Thermapen, knives, and sometimes a couple of cake pans, if I know I'll be baking. I don't usually take spices but probably should. I've got a backpack that is meant for mechanic tools but which works nicely for kitchen tools. I use the wrench slots for knives.

When I came to the Philippines, my big suitcase contained 2 good skillets 8 and 11 inch (roughly), my Shen knives, and my Thermapen. Although it was checked luggage, it must have tripped the alarms in Hong Kong because they busted the lock to get in and inspect the bag. Either that or they were heavy into kitchen gear and wanted to check out my stuff. ;)

Lisa,

I have a nylon canvas knife roll. I recommend that for car trips. It's not so good for plane trips, though, especially as a carry-on.

The only time I need to bring kitchen stuff is when we camp. I plan the meals out and do as much prep as possible at home (i.e. we always have tacos so I bring the salad and cheese already shredded, the tomatoes cut up, the meat cooked and frozen) and bring only the pots and pan I will need for each meal. I love the idea of a tool box, I'm going to look for one. Way better than the ziploc bags I throw everything into.

We take spices that we pack in a pill box. The kind that has a place for each day. The place we like to stay in Paris has a wonderfully equipped kitchen.
We are a bit spoiled!

I like to wing it. I am barely organized enough to get my clothing and toiletries packed. I went to Paris once with no pants. Other than the ones I was wearing.
