Folks,

Got menus/plans? Post 'em!

For our part, we're having a small family thanksgiving. However, we're having a bigger "leftovers day" event afterwards. Currently I'm planning to do Cajun / Creole, based on our recent NOLA trip. Only certainties so far are gumbo z'herbes, and lagniappe rolls with Steen butter.

Tiny Thanksgiving this year. Just four of us. I'm going to do a turkey breast in the slow-cooker and some mashed potatoes. Maybe sweet potato sonker for dessert.

We usually meet my MIL at a large Thanksgiving Day buffet half-way between her place and ours. This year I am cooking for 6 + lots of leftovers, of course.

Crudite-light
Variety of Olives

Kosher Turkey and Gravy (that my son got last year from his employer. It's frozen and I need to figure out how large it is but I think it's very large and will take days to defrost)
Stuffing/dressing - probably dry
Glazed Rosemary Onions
Maple Glazed Carrots, Parsnips and Rutabaga
Maybe something green too, something easy like frozen peas!

Apple Pie or Berry Pie
Pecan Pie
Graeter's Ice Cream

Herbal Tea & Coffee

Anyone have thoughts on a cajun/creole fish main course? Looks like dungeness won't be available for TY day, and we're doing soup with the first course, so I don't want it as part of the main course.

Blackened fish is right out, I don't have that kind of ventilation system and it's raining too hard to use the grill.

Any gumbo can use crawfish or seafood. Also, consider oyster chowders.

Yah, that's why I mentioned the soup as the first course; given that we're doing gumbo z'herbes, chowder/gumbo for the 2nd course really wouldn't work.

I have a recipe for crab-stuffed flounder, but given that that means de-boning a flounder in place, something I've never mastered, I don't think I'll make that one.

Pompano en Papillote? It has the seafood stuffing, but looks easier than deboning a flounder.
