Ya know, we Canucks had a lot more banter on this board about our Thanksgiving........... :? :lol:

What y'all cookin'? Anything real special? :roll:

We'll be in the office all day, but in honor of my Yankee roots, I'll try to do something most fowl for the two of us Thursday evening.

Found out my brother in Houston is trying a 'recipe' that I would run from: stuff a turkey with verges, bake at 450 for 2 hours, turn off oven and go to sleep - eat it the next day :!: :!: :?: :?:

Even I am scared by that one! What think ye :?: :shock: :o :(

Doing a small dinner for seven, pretty much the standards. Turkey, dressing, mashed potatoes, sweet potato casserole, green beans, salad, pumpkin cheesecake, guiandua mousse.

I was wondering the same thing, as usually there are a buch of posts about what everyone's cooking! I'm the baker, as usual - nobody wants to do anything adventurous for holiday dinners in this family. However, they never turn down my desserts and breads!

Tonight I baked that butterscotch pumpkin pie, from bon appétit several years ago. That is so good that I have not baked another version since I discovered it. This year bon appétit had another very similar recipe - with caramelized sugar, but no scotch, and it had a crust with ground up hazelnuts, plus some candied hazelnuts chopped up and sprinkled over the top. So I took those two parts of the recipe, but used the old, butterscotch filling. I'll let you know how it turns out.

Right now, I have a large loaf of rosemary bread baking, in a 5 qt oval dutch oven, using the Lahey no-work method. Makes up for all the work in that pumpkin pie! Earlier, I made 3 loaves loaves of pumpkin bread for gifts, and that was easy, except for multiplying the ingredients to make up for the extra pumpkin.

Cleaning out old magazines, I found an old Bon Appetit recipe for a Bruleed Bourbon Maple Pumpkin Pie. Tasting the uncooked filling, I'm afraid it may be too sweet, but we'll see.

I skinned & boned a 5.6 pound turkey breast to sous vide. Ended up with 3.25 pounds of raw meat. One of the great things about the sous vide is that I don't have to turn on the oven in the middle of the day when the temperature is in the 80's. Roasted the bones & bits for stock so that I can have just a bit of gravy. There will just be the 2 of us this year, so I'll have lots of leftovers. I'm limiting the menu to my usual brandied cranberries, mashed rutabaga. We're debating the stuffing. Judy is begging for just a bit, but I don't really want to make what amounts to just a ball of bread & fat. I think she'll win, and I'll make a little in a small dish. I planned to make a salad or another veg, but if I do the dressing, that would be too much food.

And the pie. With whipped cream, because I can make just a bit, unlike ice cream, which will sit in the freezer calling our names .....

I've lost 10 pounds in the last 6 weeks, and I don't intend to find it again over the holidays.

We bought a lovely local fresh turkey. It got brought home Tuesday. I asked if it was in the basement fridge, but didn't double check. This morning I discover it had been put into the basement freezer. I'm thawing it now in a sink full of water.
Luckily I was planning to split it and roast it on two dressings, and we aren't eating until 6PM. So I have a few hours before I really have to worry.

LOL. I've only ever cooked for seven adults twice, and maybe with kids a few times. "Small" is relative to what you are used to!
