Easter Pie at our house is almost minimalist compared to a the recipe in Cook's Country this month. Theirs has capicola, provolone, hot Italian sausage and green stuff [broccoli rabe] layered and shingled in addition to the ricotta, eggs and grated cheese.

Ours is diced ham mixed into the ricotta and egg mixture and made with a lattice top.

Easter Pie
9” Pie

1 lb. Ricotta Cheese
2 Cups diced cook ham
3 Eggs
¼ Cup grated Parmesan cheese
2 Tsp. Flour

2 Pie Crusts prepared or recipe below
• Mix all ingredients
• Pour mixture into unbaked 10” pie shell.
• Cut second crust into strips & weave for top crust.
• Bake @ 350 for 1 hour or till knife comes out clean.
• Be sure to cover edges with foil or piecrust protectors to prevent burning.

Pie Crust Makes 4 single crusts
Mix:
4 Cups of flour
1 Tbs. Sugar
1 Tsp. salt
1 ¾ Cup shortening (Crisco)
Add:
½ Cup cold water
1 Tbs. White vinegar
1 Egg
• Chill at least ½ hour before rolling crust.

Mmmmmmm

Sadly, our Easter pie will likely be the pizza variety since we are spending that week clearing out our old house so we can sell it.

In my hometown of Bay City, there is a large population of Polish people. The stores and butcher shops here not only advertise Ham, but Polish Sausage as well. Krysziak's Polish Restaurant also takes orders for their homemade Polish Sausage both fresh and smoked.

I've never heard of a savory Easter Pie…is it an East coast thing? The only Easter pie my family knows is Chocolate Silk!

It's an Italian thing.

Some pies have 33 layers for the number of years Christ lived and some have 12 for the 12 apostles. These types are rarely made these days. Most are filled with cheeses, vegetables and meat. Haven't had one for years but they are delicious and I'm thinking of making one this year.

.... Or maybe a strawberry omelette. But probably matzoh brie, given the total absence of California strawberries. :(

I have never heard of this but I am going to an Easter party this year, and I may have to make one. I'd like to find a recipe somewhere between just ham and 33 layers if anyone has a good recipe.

I have had something similar in Italy and once made an artichoke and egg pie that was very good, if you are interested. We are having Mexican for Easter, our neighbors are coming for lunch and like trying my "exotic" food.
