We usually do a Ukrainian New Years on New Year's Day (perogies, cabbage rolls, kielbasa - it's heavy so it's a once a year treat) but were traveling yesterday so just got home at midnight. New Year's Eve we usually make a nice dinner, but that will vary year to year.

I have done the Hoppin' John and silver coins cooked in cabbage (when we lived in WV), but this year we had a light brunch (ricotta and roasted red pepper frittata) and then just pecked at leftovers the rest of the day.

It's a tradition in some cultures (German? Irish? Appalachian? I encountered it in WV, so take your pick there) to cook money in the cabbage for prosperity in the New Year. The person who receives the coin(s) in their serving gets extra luck.
