Had it at work. It's incredibly simple and divine.

Roasted Pine Nut Butter

With pine nuts at $35 per pound, we wondered if it made any sense at all to make a butter out of them. Then we tasted it: the richest, most indulgent nut butter ever, and satisfying in minuscule bits, so that a little 2¬ or 3¬ounce jar makes a fine food gift, like a present of caviar.

Yield: Makes about 2 cups (serving size: 1 tablespoon)

Ingredients
1 pound toasted pine nuts
1 tablespoon canola or peanut oil, or any neutral ¬flavored oil
1/4 teaspoon kosher salt

Preparation
Start with pine nuts toasted to medium¬ brown so that the full roasty flavor comes out. (Be careful: They burn so easily!)

To make the butter, place toasted pine nuts in a food processor. Add oil and salt. Process until smooth.

I'll be working on it this weekend. From my previous nut butter days, I'll substitute ghee or clarified butter. :D

Emilie,
I don't know but guessing 3-4 months since that's the estimated fridge life for pine nuts.
