I am curious how Kenji's "Perfect Apple Pie" translated from Golden Delicious to Northern Spy apples. I must say that I was disappointed when K decided to punt on the subject of making apple pie when the apples are less than perfect and a bit past their prime season.

Jim, my bad, I left out the word "crust" in my post. I used Kenji's crust but the filling from a Canadian living recipe which calls for spys. that's the only apple I put in a pie given a choice.

How much sugar do you use in a pie made exclusively with Northern Spy apples? My Spies are very tart and I undersweetened my pie even though I had a couple sweet apples to balance the Northern Spies.

I'm not Jean, but when I lived in NY I made pies from Spies exclusively all the time. For a pie with about 7-9 apples I'd add 1/2 cup sugar. But, I don't like sweet too much in an apple pie.

Amy is spot on. The filling recipe is:
8 cups thinly peeled tart apples (2 1/4 lb)
2 tbsp. lemon juice
1/2 cup sugar
3 tbsp. ap flour
1/2 tsp cinnamon.

Brush the top with egg yolk/water and sprinkle with sugar.

They have a suggested cran-apple filling with 2 cups cranberries (fresh or frozen) with 6 cups apple, increasing flour to 1/4 cup , omitting the lemon juice and subbing half of the cinnamon for nutmeg. I might try that one next

Big Bump (as we seemed to have slipped a year): THIS IS OUR WEEKEND :!: :D :lol:

Going in a completely different direction (no cooking by me!), instead it will be an Italian theme with home-made bruschetta, meats and cheeses, breads, wines and, in a salute to the gourd, - pumpkin/maple tort with chocolate icing.

Might have to kill a few beers just to get over the Blue Jays losing 2 in a row................ :evil: :cry:
