Oh, and I made an apple pie with Kenji's recipe based on recommendations from Amy and Ilene, with half lard and half butter and using northern spy apples (picked on Saturday) in the filling. It looks gorgeousIi!

I am curious how Kenji's "Perfect Apple Pie" translated from Golden Delicious to Northern Spy apples. I must say that I was disappointed when K decided to punt on the subject of making apple pie when the apples are less than perfect and a bit past their prime season.

Back in the '50's, you could get head in a pan.

Jim, my bad, I left out the word "crust" in my post. I used Kenji's crust but the filling from a Canadian living recipe which calls for spys. that's the only apple I put in a pie given a choice.

Poor Jan in the Pan, she later became a spokeshead for making seat belts mandatory.

How much sugar do you use in a pie made exclusively with Northern Spy apples? My Spies are very tart and I undersweetened my pie even though I had a couple sweet apples to balance the Northern Spies.

I'm not Jean, but when I lived in NY I made pies from Spies exclusively all the time. For a pie with about 7-9 apples I'd add 1/2 cup sugar. But, I don't like sweet too much in an apple pie.

Amy is spot on. The filling recipe is:
8 cups thinly peeled tart apples (2 1/4 lb)
2 tbsp. lemon juice
1/2 cup sugar
3 tbsp. ap flour
1/2 tsp cinnamon.

Brush the top with egg yolk/water and sprinkle with sugar.

They have a suggested cran-apple filling with 2 cups cranberries (fresh or frozen) with 6 cups apple, increasing flour to 1/4 cup , omitting the lemon juice and subbing half of the cinnamon for nutmeg. I might try that one next

Big Bump (as we seemed to have slipped a year): THIS IS OUR WEEKEND :!: :D

Going in a completely different direction (no cooking by me!), instead it will be an Italian theme with home-made bruschetta, meats and cheeses, breads, wines and, in a salute to the gourd, - pumpkin/maple tort with chocolate icing.

Might have to kill a few beers just to get over the Blue Jays losing 2 in a row................
