Happy Anniversary, Nance!

As for Cinco de T. I am doing a photoshoot for a friend today so I am not sure I will have time to make anything complicated for tomorrow. I do have two types of Masa flour, but I also have good corn tortillas in the fridge and we had tacos Tuesday night. ;) Maybe I will make the pork asado from the Southwest Slow Cooker book. That is one of Asher's favs and not too hard to prep.

May the Fourth be with you!

We're headed out to have fish tacos on the beach this afternoon. That's about as close as we're going to get to cinco de mayo.

Nance,

Happy anniversary! BTW, Roberto Santabanez's restaurant was very good, and surprisingly affordable. For future Mexican food.

SS,

That sounds like a good 5 de Mayo to me. BTW, you didn't get flooded out, I hope?

Aw, thank you all for the anniversary wishes! We had friends spend the weekend in our apt and they left us a very generous gift of a gift certificate to Dos Caminos :o . Feeling very blessed right now, and really looking forward to our delicious Mexican dinner, and of course a few Margs.
Enjoy all your delicious meals...

I ended up making the pork adobada from the the southwestern slowcooker cook book - it is all prepped and in the slow cooker (in the fridge). Now I am wondering if I can mix my masa harina now, and make tortillas tomorrow. If it all has to be done tomorrow we will end up eating too late.

Sure, you can mix the dough ahead. Just put it in the fridge

On second thought do not put it in the fridge
