 Post subject: St. Patrick's Day!

Too early?

I was ruminating on the next family shindig which will likely be St. Pat's. It's also my granddad's birthday and it's shortly before my dad's birthday. We usually make boiled dinner from my home-corned beef. The problem is, nobody really likes boiled dinner. We all pick and choose the bits we want while wishing it was tomorrow already so we could start making sandwiches and hash. I was thinking about deconstructing (I feel so fancy.) it a bit. I would make corned beef braised in Guinness, julienned root veggies, horseradish mashed potatoes, and sautéed sauerkraut.

So my question is does anyone know a good recipe for braised corned beef? Braising in beer really appeals to me, but I may forgo the Guinness.

Why not make an Irish Guinness beef stew instead? With some bubble and squeak it would be tasty! Maybe throw in some soda bread too, or the brown bread baked in a can. Boiled dinners make me wish for sandwiches too. It's why I never make them.

Why not boil the beef a day early and then serve sandwiches and hash?

Fitzie -- I certainly always HAVE reservations. ;)

cmd -- Must have corned beef for tasty sandwiches and hash! I will make Irish soda bread, however.

Becky -- Sandwiches aren't fancy enough. I was looking forward to being all fancy. ;)

Brisket braised in beer is certainly a traditional recipe. Not made it, but now I'm craving it...
