Amusingly for a mostly-veg, I haven't had eggplant parmesan in years. In general, it's a high-fat and usually very badly done dish. The last time I had one out which was any good (or even edible) was at La Traviata in the Mission. The secret IME is to salt and dry the eggplant before cooking.

Trying to cook more and plan ahead. Started by making both bacon and onion jam yesterday. My other resolution is to clean out my cooking magazines and get rid of cookbooks I have not used in 25 years.
Started the magazine cleanup process by getting the archives for Cuisine at Home and Fine Cooking. C&H's dvd's interfact is ok, with an online search index. FC's has a very nice interface with a search index included. Both include every issue till 2013 in PDF form, which means they can be copied to the PC and transferred to iTunes for iPad use, and can recipes can be easily if I want to include them in Living Cookbook.

Not trying to clean the freezer as I have been trying that for the past few months with some success. I think I tend to cook more when my freezer is loaded with proteins so I an trying that again.

I also hope to eat more fish, finally got myself a good slotted spatula since I got really frustrated the last time I cooked thin fillets.

There is nothing at all wrong with rice. We just eat way too much of it. White, brown, risotto, ongiri. I need to find ways to get the flavors I love without all the carbs!

Pork Medallions were cooked the other day and tonight is a piece of stuffed sole. Tonight I have to pull something out for tomorrow. I wonder what it will be.
