I think you have to have something green -- after all, St. Patrick's Day is really an Irish-American holiday. For my party, I'm doing a Spinach Dip for an appetizer.

Well ...

My uncle is in town. He's allergic to fish. I don't eat meat. That leaves potatoes and beer.

So, we're having pizza.

Considering that my uncle is from Texas, I'm not sure that would go over well. ;-)

Actually, I changed my mind. Since it's an Irish holiday, I decided to cook what they eat all over Dublin:

Indian food.

The toffee sauce came out wonderful! I basically used Marilyn's toffee recipe, but reduced the quantities.

1/2 cup butter
1/2 cup sugar
1 T water
1/4 cup sliced almonds, crumbled up a bit

When it reached 310F, I added 1/2 cup heavy cream.

Oh man!!!!! The sauce is as good as the candy.

No, the green will be coming from Saag Paneer and Mint Chutney. And I'll have potato samosas, and beer, so I've got the major Irish food groups covered.

We had Matar Paneer tonight. I was making it on the ultra-cheap so, potatoes instead of paneer.

You had Mattar Aloo, actually. Kinda fun to say.

I did the whole 9 yards; I diced the paneer, dusted it with starch and fried it before combining with the greens. Quite good.
