Damn it all, I just finished struggling through peeling two dozen eggs. I swear there's no "foolproof" way to do it, no matter who claims there is. Some of the eggs peeled perfectly, most were miserable. I use CI's method for hardboiled eggs, and CK is wrong. They are not foolproof.

Trinket - Months ago Paul recommended I try the pressure cooker for HB eggs and I only have a problem in about 1 out of 36 eggs. Add 1 dozen eggs and 2 cups water to pressure cooker, bring to steam on low pressure and cook for for 6 minutes once pressure has ben reached, turn off heat for 10 minutes, open and chill with ice bath. I've maintained this process because my 82 year old MIL lives with us and has very arthritic hands, so peeling is an issue for an item she loves. She loves the results.

Thanks, wino. I've been contemplating getting a pressure cooker. That may push me over the edge. Someone on Pinterest mentioned Alton Brown's HB eggs in the oven. Anyone every try it?

Trinket, the only sure way to have easy peal eggs is to use old eggs. Buy them 7-10 days in advance and you shouldn't have any problems.

I'll stand over here with Fitzie. The last time I was forced to use my Dad's fresh eggs, well, I wasn't lady-like.

You can also leave them on the counter for a day or 2. Remember, eggs for sale didn't have to be refrigerated years ago.

Here in Europe eggs aren't refrigerated. Crystal can leave her dad's eggs on the counter but I think the ones from the supermarket need to go in the fridge. Something about how they are cleaned and permeability. Some smart person needs to step in now.
