Tonight, I'm off to get plastic eggs for my first-ever stint as the Easter Bunny's "helper". It sort of snuck up on me and I forgot to order a chocolate bunny. I'll get some peeps and jelly beans, though. I think I'll bake some cinnamon rolls for breakfast and we'll have some ham, salt potatoes, and asparagus salad for dinner with CC's Lemon Snow Pudding for dessert.

We're going to my daughter's for Easter dinner. I'm to bring a cheesecake and salad. I used to make a good salad of broccoli, cauliflour, red peppers, etc in a sort of sweet garlicky dressing. I've lost the recipe.

Anybody have a tried & true veg salad recipe to recommend?

Garlicky Sesame-cured Broccoli Salad
Time: 10 minutes, plus 1 hour marinating
1 ½ teaspoons red wine vinegar
1 teaspoon kosher salt, more to taste
2 heads broccoli, 1 pound each, cut into bite-size florets
¾ cup extra virgin olive oil
4 fat garlic cloves, minced
2 teaspoons cumin seeds
2 teaspoons roasted (Asian) sesame oil
Large pinch crushed red pepper flakes.
1. In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine.
2. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Adjust seasonings (it may need more salt) and serve.

PS there is also Nancy's pea and pecorino salad from Cooking Light, may be springier.

Fitzie, I like CI's Asparagus Vinaigrette with Sieved Egg and Pickled Pink Onions. It's all yellow and pink and green. It also uses up one of the 5 kajillion boiled eggs that are hanging around this time of year.

We're also having CI's Asparagus Vinaigrette, along with CI's Scalloped Potatoes. In addition, it'll be ham, cole slaw, green beans, fruit, deviled eggs, the fam- fav jello salad. I'm doing dessert, and am torn between CI's Lemon Layer Cake, German Chocolate or Carrot Cake. I'd like the Lemon Cake, but the others are not as lemon-crazy and I am.

Mmm matzoh Ball soup. I'm in charge of the desserts for tomorrow's passover extravaganza. I made chocolate mousse, meringues, CI macaroons (yeah, I know there is corn syrup in there), chocolate roll with whipped cream (giant ho ho or yodel depending on where you live, surprisingly no flour or leavening in it) and chocolate chip/caramel swirl ice cream. Have a good holiday everyone.
