I have been assigned desert and don't know wht I am making yet, but I am also going to make some personalized candy eggs for everyone at the dinner. It is a childhood memory with the neighbors across the street (who took pity on me because we celebrated Passover and not Easter). They let me help make these every year. The candy is made with a mashed potato base (sounds awful) and then the egg is dipped in chocolate and decorated.

Ilene - potato candy? That was a common item in West Virginia. I didn't much care for it (too sweet even for me) but it's not as bad as it sounds on its face.

I probably haven't had it in 50 years, but as I recall, it is horribly sweet. I am making it just so that I can give everyone a personalized egg....they look pretty.

A friend of mine made mashed potato mints for Christmas every year. I loved them!

The most interesting thing about Easter this year is that everybody's bringing something instead of Mom making everything. We're just doing the ham. And lots of colored eggs. And a lamb cake for the baby.

I have no idea. There are just 3 of us and I have no bright ideas at the moment. I am thinking lamb, I just bought some on sale today. Or I may just make reservations.

Ours is always very traditional: ham, salmon, a junky potato casserole that my kids still demand, a salad, veggies, and berry shortcakes.....we all look forward to it! And it can all be done ahead of time, except for the veggies.

Amy,

We always do a huge decadent brunch for easter, which means that dinner is usually a salad.

Brunch will be fairly fancy though: strawberry "omlette" (a concoction of eggs, flour, sour cream, brown sugar and fresh strawberries which Kris does), asparagus, bacon, potatoes, coffee, tea, mimosas. Waiting for RSVPs now ...
