Off topic - we made Marilyn's toffee this week - it really is to die for.
How many day a week are you working? Are you working as a pastry chef? One of my DIL's best friend is a pastry chef in Phila he made their beautiful wedding cake.

OH Amy... not dissing your wok burner, justifying my temple of coffee. As someone who is now the proud owner of a blow torch, I now GET the need for heat. @Kathy and Pete, my Parisian torching skills are still sharp. I now need to find other things to scorch.

It's still off-season here, so I'm only working a few days a week, and yes, one of my jobs is pastry chef at one of our best fine dining restaurants. Season kicks in here the week of Christmas, so I'm enjoying my time off right now.

FYI....Amy is working at the single best restaurant in all of Telluride....no contest. Would anyone expect less?

Did anybody else see the Breville (I think) PIE MAKER, it was in the WS mailer catalog (or maybe it was Sur La Tab).

It is like a panini press only there are little pie dents in it, you put dough in there then put the filling in and upper crust, then bake it.

Crazy stuff.
