This Thread I remember thinking KSS's recipe for pickled tongue looked really good. There's some other ideas for organ meat in there, as well. |

I went to visit my mom in North Dakota, and she and her significant other bought half of a roping steer that was getting too big for roping. Another fella fattened it up for them and they butchered it themselves. They aged it in their garage for a few weeks first. Considering it spent the first half of its life being chased by people on horses, the meat wasn't as tough as I thought it would be. I took a few steaks and six pounds of ground beef home with me. That will probably be all the beef we eat for the summer. |

I haven't tried any of my beef yet. It's all in the freezer. One of my co-workers has a 3 meat share and has been very happy with the Beef, Pork and Chicken. |

I have just received the 4th delivery of my beef share. I asked for a 5-8 lb roast and then the rest of my 12 lb's in Hamburger. I received a 4 lb Eye of Round Roast, a 3 lb Chuck roast and 5 lb's of hamburger. I'm not sure how to prepare the Eye of Round. Any suggestions? |

CC's recipe for Sauerbraten uses eye of round. So low and slow, also it can take some serious marinating without getting mushy. |

I've made the CI cheap roast beef with eye of round with great success, you sear it, start it in a lowish oven then turn it off for an hour or so. You do need to salt it for 12-18 hours or so, but we really like that recipe/method. |

Todd, do you have a pressure cooker? Cuban pot roast is always made with eye of the round, but it is also always done in a PC. I'd be happy to post the recipe for you if you have one. |
