It is not the butcher I usually go to but I may have to make a visit this week to investigate this. I was with a friend (Swiss) who was trained as a home ec teacher and is very well versed in Swiss cookery and even she was taken aback. We did have an interesting discussion on how one may eat cow udders. Mary |
