Post subject:  What 3 ingredients do you wish you can get locally?

We're getting a new (private) food coop, once they have 1000 pledges to get off the ground. The coop is not supposed to be like those of the ' 70's and '80's - specializing in bulk food or the like. Rather, its supposed to emphasize organic local produce, meat, dairy, etc (all the stuff you get at farmer's markets) - with a preference on locally available foodstuff but lots of exceptions if there is no local counterpart.

One interesting question that they ask all "pledges" is what 3 things we would like to see them carry. I thought about what isn't easily availble (say within 30 minutes) or might be nearby but impossible to get to because of traffic/parking and came up with: freshly slaughtered chicken, fresh eggs, and duck leg (quarters).

If you were asked what you would like to see available in your food shops that is hard to find nearby - what would you request?

1. fresh local chicken
2. artisian cheeses - someone must be making cheese around here but I've not been able to find any
3. honey - really really local, not the fifty to one hundred miles away stuff.
4. sprouted wheat bread

I've also wanted a place you could go and snip your own herbs at the food market. i.e. someone else growing an indoor (or outdoor in season) herb garden. The prepacked herbs don't always come in the combos I like, and they just don't seem fresh sometimes. Sort of like a pick your own salad bar of herbs. A living wall of herbs. It would be fun.

Lastly, bagels. Good bagels. Not really an ingredient, but we just don't have a shop here.

honey, eggs, and unusual fruit preserves (I thought of beer, but that's probably too tough given the licensing)

I can pretty much get anything I need, but it takes a bit of running around to various markets to get everything.

Actually, something very similar has come up here. Our grocer is expanding, and asked me what other stuff he should carry. While I can get almost anything somewhere in town, some things require spending an hour walking or on a bus. So here were a few of the things I asked for:

* Middle eastern bread (greek pita, armenian bread, zatar, etc.) (supply problems, apparently)
* Fresh fish counter (coming)
* "Choi" (i.e. Chinese greens, yu choi, choy sum, gai lan, etc ) (we'll see)

Raw milk -- illegal here, and likely to stay that way.
Fair-trade cocoa products -- Chocolate is pretty easy to find, but the only Dutch-process cocoa I can find is only so-so. It's hard to find chocolate cookies, ice cream, etc. that are made without slave chocolate.
Duck -- There's one place, but it's a schlep. The rest of the stores only have it around the holidays.
