The first event will be duck prosciutto from the Ruhlman/Polcyn book Charcuterie, a book well worth owning. Michael Ruhlman has been roped into this event in some fashion.

I'm in too. Had the book for a while. We have a lovely duck farm here (http://www.mariposa-duck.on.ca/default_eng.htm), and duck is available from my local mart, but I've never seen Magret unfortunately. Maybe I'll pop over the river to Quebec (where duck is very popular) to see if I can get one, and get some cheeks and croissants while I am at it.

One thing though ... here, yummy mummy has a specific connotation; some might be complimented by it, others outraged. Is this the same there?
