Post subject:  Freezing

Every summer I try to freeze as many red bell peppers as possible. It seems like most of the recipes I like to make in the winter call for them, but they cost a fortune in the winter and organic ones are nowhere to be found. So I chop up a bunch in the summer when I can get them (relatively) cheap at the farmer's market, freeze them on sheet pans, and put them in bags for later. I was chatting with my mom on the phone while working on this yesterday and she said "Don't they need to be blanched first?" Stocking Up III says they don't, but they could be. Anybody else freeze peppers? Do you blanch? Is it worth the pain in my butt?

Never blanch them. I mostly freeze chillies, just throw them in whole and cut them up still frozen.

JesBelle,

Personally, I'd roast and peel them before freezing them. That way, you don't have to do much to them after thawing. You can be lazy now, or you can be lazy later.

Fuzzy,

If my recipes called for roasted peppers, I would pre-roast. Mostly, though, the peppers are going into trinity/sofrito, or the occasional stir-fry.
