I can get 5 pound bags of beets from the local Hutterite farmers. And, while I have no interest in getting into canning, I'd like to be able to put them up in jars and simply refrigerate. Can I do that? And would I do it just the same as if I were going to can them? i.e., put the cooked beets into pickling brine and then into jars, and then refrigerate? |

Linda, According to the interwebs, yes. That's just a beet pickle, as long as there's enough salt in the brine. |

Got two 3 lb. bags of beets from the Hutterite farmers' market. Really nice quality, small sizes. I pressure cooked the beets for 15 mins. and then peeled and placed in four quart jars. Added the brine: 2 cups apple cider vinegar 2 cups water 2 cups granulated sugar 3 or 4 garlic cloves, sliced in half (this amount of brine was exactly enough for my four quart jars.) After two weeks I tasted these and they are wonderful! Every bit as good as any pickled beet I've ever had. |
