Well, if you freeze them with air in the container, they could get freezer burned, and they could get soggy when you thaw them out.
I actually find that spices in sealed containers ... even heavy zip-loc bags ... kept in the dark are good for several years. My Penzey's spillover spices are kept in the Penzey's plastic bags, in a large black canvas bag, in the pantry. Even spices which have been in there for 3 years are still pretty good. Mind you, it also helps that our apt. is between 60F and 67F about 320 days a year.

I keep seeing them everywhere here now, including my local butcher. This is the brand he had http://www.qualifirst.com/en/piri-piri- ... -epicurealThey are whole peppers. There was another one in a smaller/squat jar with a crown logo, but I snapped the picture too close and can't read the name.

Jean,
I am sending this to my husband.... yum! I have been finding the marinades everywhere, but not whole peppers. He will be thrilled.
This was the pepper I mentioned dusting on last night's scallops before sous vide-ing them. I love the flavor when used judiciously.
