Mustard with Horseradish

2 cups mustard powder (about 500g)
1 cup water
3 cups beer
3 cups cider vinegar
2 large onions, chopped
10 cloves garlic, crushed
1 teaspoon dill seed
10 bay leaves
1 cinnamon stick
1-2 Tbs finely ground horseradish, jarred or fresh

Combine mustard and water. Let stand 2 hours.

Combine all ingredients in a large saucepan except the horseradish. Simmer until reduced to about 3 cups (1/2 hour?). Strain out the solids. Combine the mustard and the liquid in a double boiler, simmering until reduced do 2 cups, about 45 minutes. Mix in the horseradish. Seal in jars for at least a week.

The recipe doesn't specify the type of beer, but I'd think you'd want to use a porter for some sweetness and depth.

You're welcome. I did find a 2nd recipe for tarragon mustard, but it doesn't look like it would work so I didn't type it up. Note that I haven't personally made either of these.
