Post subject: | Sweet Pickles |
So a couple of weeks ago I bought a bunch of tiny cukes at the farmer's market and made a few quarts of pickles. Mostly I made dill variants but thought I would try a sweet pickle since DH likes them. I used one that was pretty much just cider vinegar and sugar. After 2 weeks I noticed the pickles oddly floating and opened the jar to find a bunch of limp, shriveled pickles. The aroma was perfect, but the texture...unpalatable. Did I let them go too long? Is the recipe screwy (no water, just vinegar, sugar and some spices)? Does anyone have a good sweet pickle recipe? The dill pickles texture turned out great but I think I used too much pickling spice. (I suspect that since I made my own it was likely much stronger/fresher that store bought. Next time I'll cut back on it.) I did like the ones in which I threw a few slices of fresh ginger. Anyway, thanks in advance. |

Darcie, I made these years ago. The texture was fine even a year later. Can't testify to taste but DH liked them as did others that like the sweet variety. I don't recall using English cukes though....pretty sure I used regular ones. |
