Couldn't stand it another day, so yesterday I made a roast chicken (organic free range). I used Tim's/Hazan) rub and Keller's technique....best roast chicken I ever made. I roasted it using a square shallow cast iron pan and never turned it....it was crispy all over to my surprise.
This will now be by standard and I have to see if it will work with the Zuni roasted chicken salad .

A while back I made a chicken in a crust recipe that was in Fine Cooking, and my recollection is that it was similar to this one. It was beautiful, but the end result wasn't worth the trouble. The crust didn't add much, the chicken was just okay, so overall it definitely wasn't worth the work except for the presentation.
