I have not checked in with this blog since my first vanilla extract adventure in 2011. Thanks for excavating it for us. Reminds me of the good old days when we could have a pleasant discussion about a Cook's Illustrated recipe without any danger of getting mugged. We will be making the two day Rich Chocolate Tart for dinner group next Saturday and I am happy to hear that it is worth the effort. From the same issue, we really like the black olive tapenade. The vinaigrette dressing variation worked well with grilled Romaine hearts. |

I really like his blog. His boys are around the same age as mine and we have similar styles of food that works for us. I generally use him to decide it an issue is worth picking up or not. That chocolate tart looks good! |

I don't think anyone has mugged you on a CI recipe. They've simply pointed out that CI has been providing the same recipes with (insert superlative here) for so many years, they are no longer trustworthy on their descriptions. As well, they have been dumbing down and repeating stuff so often (with tweeks), it seems they have lost any desire for inspiration. Why do you think Kenji left? Amy |

Amy wrote: Why do you think Kenji left? To be fair, viewing Kenji's writing there is no way he could of been happy staying there, even if they loosened up a lot. He has some kind of vision of a new CI that is well beyond what his pay grade would have been there. |

I am not disagreeing with what has been said, however my understanding is that while he probably would have left anyway, the immediate reason was that his wife got a job in New York city. |

Amy Amy, I was looking at a recipe from 2004 a few weeks ago and noticed that the test cook created a problem, that any decent cook would avoid. Yes, after many attempts, the problem was magically solved. Tim |
