It's a variation on bistella, the chicken pie from Morocco. Which I happen to love. Think of them like a savory ice cream or bread pudding-not just for dessert any more!

I've been making a Greek chicken for years that has black olives and a cinnamon stick in the recipe....somehow the combination is wonderful.

I have never liked an intense flavor of raw cinnamon in a savory dish. This has turned me off to many a Moroccan and Indian dish, though when the cinnamon is toasted and the flavor is tempered, and is in the background with many other flavors, as in good Indian cooking, as well as Mexican dishes, it is delicious. I can tell by looking at that recipe that it would be one of those I wouldn't like. I want sweet and sticky cinnamon buns!

I wonder if those Moroccan dishes were meant to be made with true cinnamon rather than cassia?

Those rolls look unappetizing to me. The bisteeya I had was made with phyllo and had chicken, powdered sugar, cinnamon and nuts, I think. I wasn't sure I'd like it before I tried it...
