Hmm, I'd put smoker into the first category for sure (smoking is a pretty common stage in 'modernist' stuff), as well as dehydrator (missing from the list) which is also used quite a bit. Pacojet is not only fairly exotic, but mostly used for desserts, so unless your kitchen is making desserts, almost certainly in the second category.

Agree with you on all accounts. I've used a Pacojet extensively, but almost only for ice cream. Of course, they also cost about $4K.
