Hmm, I'd put smoker into the first category for sure (smoking is a pretty common stage in 'modernist' stuff), as well as dehydrator (missing from the list) which is also used quite a bit. Pacojet is not only fairly exotic, but mostly used for desserts, so unless your kitchen is making desserts, almost certainly in the second category. |

Agree with you on all accounts. I've used a Pacojet extensively, but almost only for ice cream. Of course, they also cost about $4K. Amy |
