Browsing recipes on the epicurious site today, I came across this gem: Quote: Boil 1 1/4 cups Port in heavy medium saucepan until reduced to 1/4 cup, about 9 minutes. Unless you had a 16" wide saucepan I just don't see this happening in 9 minutes. What are your "favorite" instructions from recipe websites? |

Boiling Port Following a Keller recipe, once I reduced a bottle of decent Port to 2 ounces over my lowest heat - took about 2 hours. Damn delicious! |

I love how recipe "writers" claim reductions, etc. in "such and such" an amount of time. Really? In who's kitchen? Amy |

Maybe the author got busy "reducing" the rest of the bottle and lost track of time. |

I thought at first it was I who could not get it reduced in the stated time ever. Now, unless it is already in use, I do my reduction on my 5 qt. SS sauté pan. I have no patience to stand and watch wine simmer down, though it helps if I "test" another bottle while I wait, just to make sure it will be ok to use in the next recipe. |
