Jim,

Looks like an ambitious chili and a bit on the spicy side too. Will you make it with the hot chilies too? And did Kenji have to call it "The Best Vegetarian Chili?"

I'm sticking with Vegetarian Bean Chili which ironically is a 30 minute recipe but better the longer it sits.

Whoo Hooo, I made the big time!! Till now my prize possession was a can of beans given to me (thanks to Lindsay) that was signed by C.K., Jack Bishop, and the entire C.I. test cook team...even Diane!

Latitude is given since he too is from a "Foreign Land". Perhaps I should send him a little (or a lot of?) back hair for his pantry? 8-) Sorta my way of getting some "skin" in the game.

Yes, Kenji did have to call his vegetarian Chili “The best” because he did some hard time [two to five] at the Station Street Culinary Correctional Facility where only “the best” will do. There are unsubstantiated rumors that inmates who settle for “very good” or “excellent” are routinely punished by the demanding warden.

The most controversial punishment is often referred to as “Weber-boarding” where inmates are routinely forced to spend cold January days in a confined alley counting Kingsford Briquettes and firing up countless Weber Kettles to do unspeakable things to expensive and hard to find cuts of meat.

Some parolees even report of being locked in small room, blindfolded and fed a diet consisting of olive oil and bread until they are nearly comatose and softly muttering to themselves “recommended with reservations, recommended with reservations”.

The indoctrination so complete in this unassuming Brookline facility, that even after being paroled, former inmates cannot shake the maniacal compulsion to make a recipe 40 or 50 times before declaring it “The Best”, “Perfect” or “The Ultimate”
