The Best Vegetarian Bean Chili.

Like his last two chili recipes, the flavor of this vegan sampling is built up from dried chiles, Kenji's favorite "umami-bombs", and a bit of alcohol to finish it. Can't wait to try it. Just in time for the Superbowl. Go Giants.

Blumenthal is fond of it for Umami. I figure we call it a spice, no one will know.

Hmmm. Interesting.

I don't agree with him about the canned beans, but it would be interesting to follow the rest of the recipe. I wonder if he considered miso for his umami bomb instead?

One comment to the article mentions Miso. Kenji's response was, "Miso in chili = genius. I must try that next time." Another commenter mentions fermented chili bean sauce that I am not familiar with.

My interest in this recipe is for a potluck dinner group that we are hosting in March. The vegetarians in the group are now vegan. I normally do not cater to their dietary needs and they do not press the issue, but when we host it I try to leave my comfort zone a bit and prepare something that everybody will eat. If sharing an interesting recipe from a trusted source is now "trolling", I guess I am officially a troll. :o I sure hope I do not turn to stone when the sun comes up tomorrow. :( Any semantic issues need to be taken up with the recipe Author. ;)
