Some dear old friends are coming to lunch in a few weeks and Mr. has a problem swallowing so no meat, no rice, nothing too dry. My first thought was manicotti/stuffed shells/lasagna type stuff. He said lots of sauce and lots of cream and not too spicy. Any ideas for me?

Mary,

That's pretty wide open:

  • Soup, of course
  • Delicate white fish (sole, flouder, trout filets) in a classic French butter sauce.
  • Risotto
  • Fettucine Alfredo
  • Greek-style spinach & cheese casserole

FYI, I'm on Chat right now if you wanna do more barnstorming.

I haven't tried that one yet Jean. Might go over well. The other thing I thought was the vegetarian bouillabaisse from Around My French Table. That is very nice and light and then I could make a a very creamy, luscious dessert. Yin and Yang baby.

Now you have me thinking of that Pumpkin Stuffed with Everything Good that you talked about a while back. Although it's not really pumpkin season.

Reporting back (I am sure you have all been on the edge of your seats). For a starter I did the smoked salmon waffles from Around My French Table, very easy to swallow! I also did the vegetarian bouillabaisse but, while the rest of us liked it, Mr. was worried about the spinach and kind of ate around it so I gave him a bowl of the broth strained. Dessert was the hands down favorite, strawberry tiramisu from Epicurious. He was also quite pleased with tea with a shot or 2 of Calvados. Thanks for your help!
