Is Thomas Edison really to blame? The complete sordid story of TAE's light bulb causing a downturn in the candle business and snuffing out demand for pig fat.

Who Killed Lard?, from National Public Radio.

Very good article and I ran into a book last month at one of the free eBook websites from 1913 called "The Story of Crisco" and it touted the superiority of the product over just about everything on the planet. It is still residing on the Kindle but I have only read a few pages of it.

Fuzzy: that was hilarious.

I don't know who injured lard, but it's not quite dead yet. I recently made old-school carnitas, braising pork shoulder cubes in leaf lard that I rendered myself. I have more lard waiting to be used - it's a wee bit porky for sweet pies, but good for savory pies and the above-mentioned braising. Hmmm, think I'll make a pot pie tonight. If you don't hear from me by tomorrow, I fell into the bottom of my chest freezer, which is where the lard resides. (-20 degrees F keeps things well but it's difficult digging things out from the very bottom.)
