This is the second time I have used Quinoa in my lunches and I am thinking I don't like it as well as rice. I know that it is supposed to be better for you than rice, but I just don't like the texture. I boiled mine and then added it to the rest of the dish. Is there another way to use this stuff? If worse comes to worse, I will go half and half with rice just to use up what I have left.

Todd,

I think quinoa is fine stuff, but it's not a substitute for rice. You reall need to use it in recipes which are written for it.

Mostly, I'd cook it pilaf-style.

Josh,
I did use the absorption method per CI's instructions on how to cook grains. It's funny, because when I cook this grain, it has all these little rings around these balls and I can't get over it looking like hundreds of tiny little Goldfish eyes staring back at me. Also, the texture feels like tiny little eyeballs or what I think an eyeball would feel like if I were to eat one.
What are some good ways to use this stuff? I mixed mine with some tomato, ground Turkey and spices.

Some stuff you might just not like. No matter how good it is for you. Toasting the quinoa in a dry pan before cooking it gives it a nuttier flavor. You can also spice it agressively-it is rather bland.

Todd, I cook mine in chicken stock, usually saute some veg first. It is also good mixed with other grains. I buy a grain blend at TJ's called Harvest Grain Blend. It's a mixture of Israeli couscous, orzo, baby garbanzo beans and red quinoa. So it's a nice mix of pasta, beans and grain.I use chicken stock to cook that as well. It is really good, maybe something like this would appeal to you more.

I'm on the road right now, but somewhere I have some traditional South American dishes which use quinoa.

I'm just bumping this up.

Wondering if anyone has any interesting quinoa recipes to share?

On a side note, I see above that MiGirl talks about the Harvest Grains Medley from TJ's and although I love the idea, the sad thing is that baby garbanzo beans never seem to cook for me. Is there a trick to this? I followed the package directions and never have them come out other than crunchy and seriously undercooked.

My favorite way to eat quinoa is: saute a diced onion and minced garlic in olive oil, stir in quinoa and toast for a minute, then add in half chicken broth/half water. Simmer until done, stir in lemon juice, feta, and kalamata olives. I throw in parsley if I have it. Oh, and I add a can of chickpeas when I have them.

I could eat this every day for lunch, and it is easily vegetarian without the broth.
