I save cut onions all the time. Perhaps that is part of my digestive problem. Very interesting. Thanks for sharing.

Interesting ... she doesn't mention that cut cooked potatoes are, in fact, a bacteria magnet. Their balanced-PH starchy damp surfaces form an almost perfect bacterial culture environment. When potato salad "goes bad", it's generally the potatoes spoiling the mayonnaise rather than the other way around.

On the other hand, I've kept cut onions in the fridge for weeks.

Yeah, I'd be looking at the potatoes if my potato salad went bad. I keep cut onions all the time -- especially the red ones which I can't seem to find in sizes smaller than my head. I have a hair-trigger digestive system and if cut onions were bad for me, I'd certainly know it by now.
