We had the power out here for just under 24 hours-we got plenty of ice into the bigger freezer and fridge and lost nothing to the situation, but I was forced to clear out the smaller freezer just to make sure there weren't ice clumps and sheets from drips and so on. So I've got a nice big pot of chicken stock going with all of the bits and pieces I'd saved up in baggies here and there.
It's great to have the house smell like cooking again. :D
I also have enough frozen bananas to make several batches of banana bread,or cake or.....

Why do you freeze bananas? Aren't they available year-round?

Six lovey quarts now chilling in the fridge!
I freeze bananas that my roommates buy but don't eat. I hate to eat something that I'm not sure they don't want, but I've gotten to tell with bananas. Once they start to get speckled they sit and sit, so I've taken to freezing them and using them frozen in smoothies.
Just tossing them seemed silly.

Becky, I do the same thing. Somtimes they ripen faster than we eat them so I either make banana bread then or freeze for when I have the time. They work great. Not tried them in smoothies, but I amagine they'd go in frozen.

Do you toss the liquid or use in the batter? I have done both.

Your stock sounds great! You're cooking some today and I'm thawing some to use in the rice for dinner.

OK, here's a dumb question. Do you peel the bananas before freezing?

I do. I peel and put into a zip-lock bag. I find them harder to peel when they're frozen. Those pesky strings dond't want to give.
