Todd,

My, don't those look sweet!

Note, though, that Mr. Kramer is booked up for the forseeable future, so forget buying yourself one unless you're a famous enough chef to cut into his schedule. Also, the "Bob Kramer" knives sold by W-S aren't actually made by him (or handmade, period), just designed by him.

You can get less expensive hand-forged knives from the Ferndale Blacksmith: http://www.ferndaleblacksmith.com/knives.html

I have one and it's my primary knife; carbon steel is just sharper than anything stainless you can get. However, they're quite a bit heavier and not nearly as carefully designed or high-class as the Kramer knives. Mor importantly, there's quite a bit of individual variation so it's hard to buy one without trying it out in person.

I have been thinking about these knives all day. I was trimming a tenderloin for a party tonight and I was thinking how well one of his knives would do the job. I still can't get over him cutting the rope, the steel and the water bottles. Just too cool!
