Thanks. I love the herbs in butter. I'm going to try it today. Have a bunch of herbs and butter leftover from yesterday.

Fitzie, I do this with chopped parsley and garlic whenever I'm making meatballs, I almost always have extra. Pop it in the mixer/food process with a stick or two of butter and blend, then either put in blobs on sheet to freeze or just roll into a log and slice off whenever we want garlic bread.
I have a giant sage plant and plan to try and save some in oil for chicken dishes.

Jean - I picked the last of the sage yesterday and have a nice bunch of tarragon (my favaorite). I plan to try the "freeze in butter" method of saving herbs. I like your idea of rolling into a log better than the ice cube tray. Thanks for the tip.

I just went back to check and the link is showing the herbs frozen in olive oil (which looks like butter in the picture!)
So guessing if using that the tray would be easier. I plan to use my mini muffin tins since I have no idea where my ice cube trays are.

I make compound butters with herbs -- especially tarragon -- quite often and roll them into logs, and freeze. Slice off a round and place on a just cooked meat.... oh yum. Gilding that lily!

And nothing helps things keep longer than a Foodsaver, as many of us can testify to! It helps greatly with butter, as even in a freezer, butter oxidizes - ever wonder why that layer of dark yellow is on the surface of a frozen cube of butter? I have not seen this since I freeze all of my butter in FS, and I still have a bunch of butter from last cookie baking season. For herb butters, simply freeze it, then foodsaver it, and this way the butter won't squeeze out.

Tarragon and epazote are the only two herbs I have to preserve, and I do this with salt. It darkens the color, but they taste almost as good as fresh picked.
