All,

This one from Culture Cheese Magazine. I don't even remember what I had to do for it (contest was 3 months ago); description of my favorite cheese, I think.

Anyway, I will soon be the proud (?) owner of a beechwood rotary cheese shaver and an entire Tete de Moine cheese. If anyone likes cheese, it's time to come visit us ...

Congratulations! I'd love to come and have some cheese! Unfortunately the airport is snowed in right now...

Darcie,

It's fairly pungent, somewhere between a swiss cheese and a camebert. Partly because of the presentation, tete-de-moine is standard in the cheese course at NY steakhouses. At least, it used to be.

It's strong enough to be a cheese you generally consume in small amounts, like 1/2 oz servings. What I'm going to do with 2lbs of it, I'm not sure. I hope it keeps ...

That is a good cheese. The shavers were very popular when I first moved here but I never got one (also thinking of the size of the cheese). You can buy the cheese already shaved though, looks great on a cheese plate. They also sell blocks of chocolate that fit onto the machine too.
